In our house brownies rock and we make them often. I have done the cupcake brownies before and added nuts, chocolate candies, and such but never an oreo cookie. Saw a blog post for a cupcake brownie with oreos and peanut butter the other day and it inspired me to whip some of these up for my husband’s birthday this week. I try and make as much food in our home be from scratch and all natural/organic/local as possible. I don’t want to be the no treats and sweets mom so instead of buying candy and junk food I will make versions at home where I know what is in them. Granted for this one I didn’t want to go all the way to Whole Foods so I did just buy conventional oreos {Back to Nature has fabulous ones that I will use next time 🙂 } and they worked out fine.
What you will need:
Brownie mix made from scratch or your favorite box mix and the goods to make it
A box of oreos
cupcake liners {optional but I love them for an easy clean up}
Muffin Tin
Preheat your oven to 350 degrees unless your mix says otherwise.
Make your brownie mix per instructions.
I decided to try the non dip method that I have seen on other blogs ….truthfully I just didn’t want to deal with a lot of mess to clean up this day and this way was easier for Victoria to help out with her Daddy’s treat. 🙂
Put a little bit of your brownie mix in the cupcake liner that is placed in the muffin tin.
Place one or two oreos {depending on how you want it} down on top of the brownie mix. If you use two I would put a little brownie mix in between the oreos.
Spoon brownie mix on top of oreos so that they are totally covered up.
Pop them in the oven for 25 – 30 mins.
The first batch I did I took out at 25 mins and this one was more soft and chewy.
The second batch I did for about 30 mins or so and this one came out more cake like. I liked them both ways. They chewy version is super yummy when its chilled in the fridge before eating. 🙂
Pop them out of the muffin tin and place them on a rack to cool.
We have found that they are delicious cooled in the fridge, stored at room temp., or warmed up a bit. Let’s face it, they are just super yummy all around. lol
This is the version that cooked a few mins longer and got a more cake like texture. Next time I might try and do the two oreos in each thing and see how that one works. Since I still have oreos left over I am thinking about trying this:

Me too! These didn’t last long in out house and my daughter and husband have already been asking me to make some more 🙂 I am going to try and freeze a couple to see if that works or not. Then I can just make a giant batch and have them for a few weeks 🙂
